In a bowl, mix the yoghurt with the applesauce. Place to one side.
In a small pan over a medium heat, toast the flaked almond until golden and fragrant. Remove from pan to cool.
In the same pan, add the apples. Sprinkle over the cinnamon, and cook over a medium heat for around 5 minutes, until softened. You can add a couple tsps of water as they cook, to speed the process along.
In 2 small jars, glasses or bowls, add half the yoghurt, followed by half the apples, and half the granola. Repeat with the rest of the ingredients, then top the parfaits with the flaked almonds.
Notes
Note on cooking apples: If you prefer, you can just place the apple cubes in a microwave-safe bowl, stir through the cinnamon, and microwave them on high for 1 minute. This is definitely a good option if you’re rushed for time.
